Delicious and healthy vegan burritos filled with black beans, rice, and fresh vegetables.
Ingredients

- 2 large flour tortillas (each about 10 inches/25cm)
- 1 cup cooked black beans, drained and rinsed
- 1/2 cup cooked brown rice
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/4 cup vegan sour cream
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a medium bowl, combine black beans, brown rice, corn, tomatoes, red onion, cilantro, lime juice, cumin, chili powder, salt, and pepper. Mix well.
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side to make them pliable.
- Place each tortilla on a flat surface and spread a thin layer of vegan sour cream in the center.
- Spoon half of the bean and rice mixture onto the lower third of each tortilla.
- Fold the sides of the tortilla inward, then roll tightly from the bottom to enclose the filling.
- Serve immediately, or wrap in foil to keep warm.
Notes
- Adjust spices to taste for a spicier burrito.
- Feel free to add other vegetables like bell peppers or zucchini.
