Description

Delicious and healthy brownies made with black beans for a rich texture.


Ingredients

  • 15 ounces black beans (canned and drained)
  • 3 large eggs
  • 1/4 cup oil (Any neutral oil, including vegetable, safflower, or refined coconut oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup cocoa powder (sifted)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (divided)

Instructions

  1. Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.
  2. Combine the black beans, eggs, oil, vanilla extract, brown sugar, white sugar, cocoa powder, baking powder, and salt in a high speed blender. Blend until smooth.
  3. Fold through half the chocolate then transfer the batter into the lined pan. Top with remaining chocolate.
  4. Bake the brownies for 20-30 minutes, or until a skewer comes out clean.
  5. Let the brownies cool in the pan completely, before slicing and serving.
