A delicious and creamy cabbage casserole with a crunchy topping.
Ingredients

- 1½–2 pound head green cabbage (cored and roughly chopped into bite-sized pieces)
- 1 large yellow onion (roughly chopped into bite-sized pieces)
- 10 oz. can cream of chicken soup
- 1 cup mayonnaise
- 1 tsp coarse salt
- 1 tsp pepper
- ¼ tsp garlic powder
- 2 cups crushed Ritz crackers
- ¼ cup salted butter (melted)
- 1 cup shredded Colby Jack cheese
Instructions
- Preheat oven to 350°F and grease a 9×13-inch casserole dish.
- Add the cabbage and onion to your casserole dish.
- In a small mixing bowl, stir together the cream of chicken soup, mayonnaise, salt, pepper, and garlic powder. Spoon the mixture over the cabbage.
- Combine the Ritz crackers and melted butter in a medium mixing bowl. Sprinkle the cracker mixture over the casserole.
- Bake uncovered for 35 minutes. (Tent with foil toward the last 10 minutes if you notice it over-browning.)
- Sprinkle the cheese evenly over the top. Bake for an additional 5 to 10 minutes until the cheese is melted, and the cabbage is tender.
Notes
- For added flavor, consider using a flavored cream of chicken soup.
- Ensure the cabbage is tender before serving.
- This dish can be made a day ahead and baked before serving.
