Description

A delicious and creamy cabbage casserole with a crunchy topping.


Ingredients

  • 2 pound head green cabbage (cored and roughly chopped into bite-sized pieces)
  • 1 large yellow onion (roughly chopped into bite-sized pieces)
  • 10 oz. can cream of chicken soup
  • 1 cup mayonnaise
  • 1 tsp coarse salt
  • 1 tsp pepper
  • ¼ tsp garlic powder
  • 2 cups crushed Ritz crackers
  • ¼ cup salted butter (melted)
  • 1 cup shredded Colby Jack cheese

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch casserole dish.
  2. Add the cabbage and onion to your casserole dish.
  3. In a small mixing bowl, stir together the cream of chicken soup, mayonnaise, salt, pepper, and garlic powder. Spoon the mixture over the cabbage.
  4. Combine the Ritz crackers and melted butter in a medium mixing bowl. Sprinkle the cracker mixture over the casserole.
  5. Bake uncovered for 35 minutes. (Tent with foil toward the last 10 minutes if you notice it over-browning.)
  6. Sprinkle the cheese evenly over the top. Bake for an additional 5 to 10 minutes until the cheese is melted, and the cabbage is tender.

  • For added flavor, consider using a flavored cream of chicken soup.
