- 2 1/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons instant coffee granules
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a small bowl, dissolve instant coffee granules in vanilla extract and set aside.
- In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then mix in the coffee-vanilla mixture.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture. Stir in chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are golden.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- For a chewier cookie, bake for slightly less time.
