Description

Delicious chocolate chip cookies with a hint of coffee flavor.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons instant coffee granules
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a small bowl, dissolve instant coffee granules in vanilla extract and set aside.
  3. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in the coffee-vanilla mixture.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture. Stir in chocolate chips.
  6. Drop rounded tablespoons of dough onto prepared baking sheets.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
