Description
A delicious chicken salad made with Greek yogurt, vegetables, and fresh herbs.

- 1 pound chicken breasts (shredded)
- ¾ – 1 cup 0% Greek yogurt
- ¼ cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 – 2 tablespoons lemon juice (fresh squeezed)
- to taste kosher salt (to season)
- to taste cracked black pepper (to season)
- ½ – ¾ cup peas (quickly blanched and cooled)
- ½ cup Swiss cheese (diced small)
- ⅓ cup sweet onion (diced small)
- ⅓ cup celery (diced small)
- 2 tablespoons Italian parsley (chopped small)
- 2 tablespoons fresh dill (chopped small)
Instructions
- Bring a small pot of salted water to a boil. Add the peas and cook for about 1–2 minutes, just until they turn bright green and slightly tender.
- Immediately drain the peas and transfer them to a bowl of ice water to stop the cooking process. Let them chill for a few minutes, then drain well and pat dry before adding them to the salad. Set aside.
- Add the cooked chicken breasts to a stand mixer with the paddle attachment. Warm chicken breaks down the easiest. However, it will work with cold too. You might want to break down the cold chicken into smaller pieces before turning on. Turn it on low and process for 30-60 seconds or until it reaches your desired texture. Be sure not to over-process the chicken, as it can become mushy.
- Add the shredded chicken to a mixing bowl. Add the 0% Greek yogurt, mayonnaise, Dijon mustard, fresh squeezed lemon juice, kosher salt, and cracked black pepper. Mix until well combined.
- Next, add the diced celery, onions and fresh herbs. Gently fold in the peas and Swiss cheese. Taste and adjust seasoning as needed.
Notes
- This salad tastes even better after it sits for a few hours in the fridge.
- For added crunch, consider adding chopped nuts or seeds.
