Instructions

  1. Crush the Strawberries: Start by pulsing your freeze-dried strawberries in a food processor until they resemble a fine powder with a few larger bits for texture. This gives the cookies that unmistakable berry flavor and color.
  2. Make the Dough: In a large mixing bowl, cream together the butter and sugar until light and fluffy—about 2–3 minutes. Add in the egg and vanilla extract, mixing until combined. Then stir in the baking soda, salt, and crushed strawberries.
  3. Add the Flour: Slowly mix in the flour until the dough just comes together. The dough will be soft but not sticky.
  4. Chill the Dough: For the best texture, refrigerate the dough for at least 30 minutes. This helps prevent spreading and intensifies the flavors.
  5. Bake: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop the dough into balls (about 1 tablespoon each) and space them out on the sheet. Bake for 10–12 minutes or until the edges are just golden and the centers are set.
  6. Cool and Dip in Chocolate: Allow the cookies to cool completely. Then melt the chocolate using a double boiler or in the microwave in 30-second increments. Dip half of each cookie into the melted chocolate and place them on a parchment-lined tray.
