Garlic Mashed Red Potatoes

Description

A creamy and flavorful mashed potato recipe that is vegan-friendly and perfect as a side dish.


Ingredients

Scale
  • 3 lbs red potatoes, medium (2-3")
  • 1/2 cup vegan butter
  • 1 cup unsweetened almond milk
  • 2 Tbsp garlic powder
  • salt/pepper (to taste)
  • fresh basil leaves (optional)

Instructions

  1. Cut the red potatoes into quarters and place in a large stock pot.
  2. Add enough water to cover the potatoes and bring to a boil.
  3. Bring to a simmer and cover for 20 minutes (or until soft).
  4. Remove from heat and let cool for about 5 minutes.
  5. Drain any excess water.
  6. Mash the red potatoes and add in the butter, milk, garlic powder, salt, and pepper.
  7. Top with fresh basil (optional) and enjoy!

Notes

  • For a creamier texture, use a potato ricer.
  • Adjust the seasoning according to personal preference.
