Description

Ingredients

  • 4 chicken thighs or breasts
  • 4 Yukon Gold or Russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups fresh spinach, arugula, or mixed greens

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes if desired. Cut them into bite-sized cubes or wedges, and place them in a large bowl. Toss them with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned potato cubes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden and crispy.
  4. While the potatoes are roasting, heat a skillet over medium-high heat with a drizzle of olive oil. Season the chicken with salt, pepper, and any additional spices you prefer. Sear the chicken for about 5-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C). Remove it from the skillet and let it rest for a few minutes before slicing.
  5. Once everything is cooked, it’s time to assemble. Start with a base of fresh greens in each bowl, then layer on the crispy potatoes and sliced chicken. You can add any additional toppings you like, such as avocado slices, cheese, or a drizzle of your favorite dressing.
