Ingredients

- 1 cup eggnog
- 1 cup all-purpose flour
- 3 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2–4 tablespoons water (as needed)
Instructions
- In a blender, combine eggnog, flour, eggs, melted butter, vanilla, nutmeg, and salt. Blend until smooth.
- Let the batter rest for 20–30 minutes at room temperature.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour 1/4 cup of batter into the skillet, swirling to coat the bottom.
- Cook for 1–2 minutes until golden underneath, then flip and cook another 30 seconds.
- Transfer to a plate and repeat with remaining batter.
- Serve warm with toppings of choice like whipped cream, fruit, or syrup.
Notes
- Using room temperature ingredients helps in achieving a smoother batter.
