  • ½ cup red onion, finely chopped
  • ½ cup frozen peas, thawed
  • ¼ cup fresh parsley, chopped
  • ¼ cup Greek yogurt or mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water to a boil. Add whole wheat pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to prevent sticking.
