Description

This creamy frittata with dill cheese pikelets is a delightful dish perfect for brunch or a light dinner.


Ingredients

  • 6 pieces Eggs
  • 200 ml Cream
  • 150 g Tasty Cheese
  • 2 cloves Garlic
  • 100 g Peas
  • 2 pieces Green Onions
  • 100 g Asparagus
  • 200 g Self-Raising Flour
  • 150 ml Milk
  • 20 g Dill
  • 30 g Butter
  • 200 g Smoked Salmon
  • 100 g Pickled Onions
  • 50 g Capers
  • 150 g Whipped Cream Cheese
  • 100 g Berry Yoghurt

Instructions

  1. Preheat your oven to 180°C (fan-forced) while you prepare the Frittata. Grease and line a 20cm square cake pan.
  2. Whisk together the eggs, cream, tasty cheese, and garlic in a large bowl. Season with salt and pepper. Stir in peas and green onions, then pour into the prepared pan, topping with asparagus.
  3. Bake for 30-35 minutes until set and slightly golden. Allow cooling for a few minutes before cutting into squares.
  4. Combine the ingredients for the Dill Cheese Pikelets by whisking milk and eggs together in another bowl. Gradually mix in the sifted self-raising flour to achieve a smooth batter. Gently fold in the cheese and dill.
  5. Heat a non-stick frying pan over medium heat. Drop spoonfuls of Pikelet batter into the pan, cooking until bubbles form on the surface. Flip and cook for an additional minute, then transfer to a cooling rack.
  6. Warm the Frittata and any Pikelets as needed. Arrange slices of smoked salmon, pickled onions, whipped cream cheese, capers, and berry yogurt around the Frittata and Pikelets.
  7. Garnish with fresh herbs for extra color and flavor if desired.

Notes

  • This recipe can easily be modified for vegetarian or dairy-free diets by substituting the smoked salmon with smoked tofu and using plant-based alternatives for the dairy products.
