Delicious cookies filled with mixed dried fruits and warm spices.
Ingredients

- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg (room temperature)
- 1/4 cup brandy (optional)
- 1 cup mixed dried fruits (raisins, currants, chopped apricots)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, and nutmeg.
- In another bowl, cream butter and brown sugar until light and fluffy.
- Beat in the egg one at a time; mix in brandy if using.
- Gradually add dry ingredients to wet mixture until just combined.
- Fold in dried fruits until evenly distributed.
- Scoop dough onto prepared sheets about two inches apart and bake for 12-15 minutes until golden brown around the edges.
- Cool on wire racks before serving.
Notes
- Allow cookies to cool completely before storing in an airtight container.
- Brandy can be omitted for a non-alcoholic version.
