Ingredients

  • 3 tbsp white miso paste
  • 2 tbsp unsalted butter
  • 4 cups low-sodium chicken broth
  • 2 green onions, thinly sliced
  • 2 soft-boiled eggs
  • 2 sheets nori, cut into strips
  • 1 tsp sesame oil
  • 1 cup seasonal vegetables (bok choy or mushrooms)

Instructions

  1. In a large pot, heat chicken broth and miso paste over medium heat until miso dissolves.
  2. Stir in unsalted butter until melted and combined.
  3. Add ramen noodles and cook according to package instructions (approximately 3-4 minutes).
  4. Taste the broth and adjust seasoning with salt or soy sauce if needed.
  5. Serve ramen in bowls topped with soft-boiled eggs, green onions, nori strips, sesame oil, and any additional toppings you desire.
