Ingredients

- 2 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fine salt
- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable shortening (or more butter)
- 1 1/4 cups granulated sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 1/2 cup sour cream
- 2 tbsp cornstarch
- 2–3 tbsp milk (as needed, for dough)
- 1/2 cup unsalted butter, softened (for frosting)
- 2 1/2 cups powdered sugar (for frosting)
- 2–3 tbsp heavy cream or milk (for frosting)
- 1 tsp vanilla extract (for frosting)
- Pinch of salt (for frosting)
- Pink gel food coloring (optional)
- Sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, and cornstarch in a bowl.
- Beat the softened butter, shortening, and granulated sugar until light and fluffy, about 2–3 minutes.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Mix in the sour cream until smooth.
- Add the dry ingredients to the wet ingredients and mix just until combined. If the dough feels dry, add 1–3 tablespoons of milk, a little at a time. Cover and chill the dough for 45–60 minutes.
- Scoop 1 1/2–2 tablespoon portions and gently roll into balls. Place on the baking sheet and lightly flatten to a thick disk.
- Bake for 9–11 minutes, until the tops look set and the bottoms are just barely golden. Do not overbake. Cool on the pan for 5 minutes, then transfer to a rack to cool completely.
- Beat the butter until creamy. Add powdered sugar, vanilla, salt, and 2 tablespoons cream/milk. Beat until fluffy, adding more cream/milk as needed. Tint with pink gel coloring if desired.
- Spread frosting over fully cooled cookies and add sprinkles. Let the frosting set for 20–30 minutes before stacking.
Notes
- For a richer flavor, you may substitute the vegetable shortening with more butter.
- Ensure the cookies are fully cooled before frosting to prevent melting.
