This cheesy beef corn casserole is a comforting dish perfect for family dinners.

- 1 lb ground beef
- 1 can (15 oz) sweet corn, drained
- 2 jalapeños, chopped
- 1 cup shredded sharp cheddar cheese
- 1 cup cornmeal
- 2 large eggs
- 1 cup whole milk
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then season with salt, pepper, cumin, and chili powder. Stir in the chopped jalapeños and sweet corn.
- In a separate bowl, whisk together the eggs and milk until well combined.
- In another bowl, mix the cornmeal with seasoning and any remaining spices.
- Spread the beef mixture evenly in the baking dish. Pour the egg-milk mixture over it, followed by topping with the seasoned cornmeal mix.
- Bake for 25-30 minutes or until golden brown on top. Serve hot, optionally garnished with additional cheese.
