- 3 medium acorn squash
- 2 Tbsp olive oil
- 1/4 tsp salt (or to taste)
- 1/4 tsp pepper (or to taste)
Instructions
- Preheat the oven to 400 degrees F.
- Cut the squash into halves and remove the seeds.
- Brush the flesh side with the olive oil.
- Sprinkle salt, pepper, and any other desired seasonings on the flesh side.
- Place the squash cut side down on a baking sheet lined with parchment paper.
- Roast for 35-40 minutes, or until the squash is tender.
