Creamy Arborio Rice Pudding

Description

This creamy arborio rice pudding is a comforting dessert that is both rich and delicious. Perfect for warm evenings or as a chilled treat.


Ingredients

Scale
  • 1 cup uncooked arborio rice
  • 2½ cups whole milk
  • 1 cinnamon stick
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 14 ounces sweetened condensed milk
  • ½ cup raisins (optional)
  • 2 tablespoons unsalted butter (optional)
  • ground cinnamon or nutmeg (optional for garnishing)

Instructions

  1. To a medium saucepan, add the rice, 2½ cups milk, cinnamon, and salt, and bring to a gentle boil over medium heat, stirring occasionally.
  2. Reduce heat to medium-low and simmer uncovered, stirring frequently making sure to scrape the bottom of the pan, for about 30-35 minutes, or until the rice is tender and most of the milk is absorbed.
  3. If the mixture thickens before the rice has fully softened, gradually add the remaining ½ cup milk in increments as necessary, and continue cooking until the rice is soft.
  4. When the rice is fully cooked and tender, if you used a cinnamon stick, remove it now.
  5. Add the sweetened condensed milk, vanilla extract, optional raisins and/or butter, and stir to combine.
  6. Continue simmering for 5 to 10 minutes, or until as thick and creamy as desired.
  7. Serve warm; or cover and chill in the refrigerator and serve chilled.
  8. If desired, optionally dust with a sprinkling of cinnamon and/or nutmeg before serving.

Notes

  • For best results, use arborio rice as specified.
  • This recipe can be adjusted for sweetness as per personal preference.
  • Ground cinnamon can be used instead of a cinnamon stick if preferred.
