A delicious sweet potato pie made with mashed sweet potatoes, sugar, and spices.

- 2 cups mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup evaporated milk
- 1/2 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 9-inch unbaked pie crust
Instructions
- Boil or roast the sweet potatoes until fork tender. Peel and mash until smooth.
- In a large bowl, mix the sweet potatoes with sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Pour the filling into the unbaked pie crust and smooth the top.
- Bake at 350°F (175°C) for 50–60 minutes or until the center is set and a knife inserted comes out clean.
- Cool on a wire rack, then chill before slicing and serving.
Notes
- Serve the pie chilled for the best flavor.
- Pairs well with whipped cream on top.
