Description

Delicious and healthy strawberry oat bars perfect for a quick snack or breakfast.


Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh or frozen strawberries, chopped
  • 1 tablespoon chia seeds (optional)
  • 1/4 cup almond milk (or any plant-based milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, almond flour, baking powder, salt, and chia seeds.
  3. In a separate bowl, mix the melted coconut oil, maple syrup, vanilla extract, and almond milk until fully combined.
  4. Pour the wet ingredients into the dry mixture. Stir until everything is well combined.
  5. Gently fold in the chopped strawberries until evenly distributed throughout the mixture.
  6. Pour the mixture into the prepared baking pan and spread it out evenly with a spatula.
  7. Place the pan in the preheated oven and bake for 30-35 minutes or until the edges become golden and a toothpick inserted in the center comes out clean.
  8. Once baked, remove from the oven and let it cool in the pan for about 15 minutes. Then, transfer to a wire rack to cool completely before slicing.
  9. Cut into bars once cooled and store in an airtight container.
