Ingredients

- 2 cups rolled oats
- 1 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups fresh or frozen strawberries, chopped
- 1 tablespoon chia seeds (optional)
- 1/4 cup almond milk (or any plant-based milk)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond flour, baking powder, salt, and chia seeds.
- In a separate bowl, mix the melted coconut oil, maple syrup, vanilla extract, and almond milk until fully combined.
- Pour the wet ingredients into the dry mixture. Stir until everything is well combined.
- Gently fold in the chopped strawberries until evenly distributed throughout the mixture.
- Pour the mixture into the prepared baking pan and spread it out evenly with a spatula.
- Place the pan in the preheated oven and bake for 30-35 minutes or until the edges become golden and a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and let it cool in the pan for about 15 minutes. Then, transfer to a wire rack to cool completely before slicing.
- Cut into bars once cooled and store in an airtight container.

- Store leftovers in an airtight container for up to one week.
- These bars can be frozen for longer storage.
