- ½ cup unsalted butter, softened
- ½ cup creamy Biscoff cookie butter
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 cup white chocolate chips (plus extra for topping)
Instructions
- Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper so your cookies bake evenly and don’t stick.
- In a large bowl, cream together the softened butter, Biscoff cookie butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This takes about 2–3 minutes with a hand mixer or stand mixer and is essential for creating that soft, chewy texture.
- Next, beat in the egg and vanilla extract. The dough will become smooth and creamy at this point, and the warm smell of the cookie butter will start to come through.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Slowly add the dry ingredients to the wet, mixing until just combined. Be careful not to overmix here—just until the flour disappears into the dough.
- Fold in the white chocolate chips gently, making sure they’re evenly distributed throughout the dough.
- Scoop the dough into balls (about 1 ½ tablespoons each) and place them a few inches apart on the prepared baking sheets. If you like your cookies to look extra tempting, press a few additional white chocolate chips into the tops before baking.
- Bake for 9–11 minutes, just until the edges are lightly golden and the centers still look soft. Don’t overbake—they’ll continue to firm up as they cool.
- Let them cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm or let them cool completely and store for later.
Notes
- Make sure to not overmix the dough for best results.
- You can add more white chocolate chips on top for extra sweetness.
