Instructions
- Gather all your ingredients to ensure everything is ready before you start.
- In a bowl, mix the coconut milk, lime juice, lime zest, minced garlic, grated ginger, and a pinch of salt and pepper.
- Add the chicken breasts to the marinade, ensuring they are well coated, and allow to marinate for 10-15 minutes.
- Heat the olive oil in a large pan over medium heat.
- Add the marinated chicken breasts to the pan and sear for about 5-6 minutes on each side until golden brown.
- Pour the reserved marinade into the pan and bring it to a simmer.
