Description

Ingredients

  • 1 can coconut milk
  • 2 pieces limes (Juiced for marinade.)
  • 1 piece lime (Zested for added flavor.)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil
  • to taste salt and pepper (For seasoning.)
  • for garnish fresh cilantro (Chopped.)

Instructions

  1. Gather all your ingredients to ensure everything is ready before you start.
  2. In a bowl, mix the coconut milk, lime juice, lime zest, minced garlic, grated ginger, and a pinch of salt and pepper.
  3. Add the chicken breasts to the marinade, ensuring they are well coated, and allow to marinate for 10-15 minutes.
  4. Heat the olive oil in a large pan over medium heat.
  5. Add the marinated chicken breasts to the pan and sear for about 5-6 minutes on each side until golden brown.
  6. Pour the reserved marinade into the pan and bring it to a simmer.
  7. Let it cook for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Remove the pan from heat, garnish with freshly chopped cilantro, and serve.
