Description

A delicious and comforting lasagna soup packed with flavors of ground beef, marinara sauce, and a blend of cheeses.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef (or Italian sausage)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth (or beef broth)
  • 1 (24-ounce) jar marinara sauce
  • 1 (14-ounce) can diced tomatoes, undrained
  • 8 lasagna noodles, broken into bite-sized pieces
  • Salt and black pepper to taste
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and onion, and cook until the meat is browned and the onion is softened, about 5-7 minutes. Drain excess fat if desired.
  2. Add the minced garlic, oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth, marinara sauce, and diced tomatoes with their juices. Stir well to combine and bring to a boil.
  4. Once boiling, add the broken lasagna noodles. Reduce heat to a simmer, cover, and cook for 10-15 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  5. While the soup simmers, prepare the cheese topping. In a small bowl, mix the ricotta and Parmesan cheese until combined.
  6. Once the pasta is cooked, taste the soup and season with salt and black pepper as needed. Ladle the hot soup into bowls.
  7. Top each serving with a dollop of the ricotta-Parmesan mixture and a generous sprinkle of shredded mozzarella cheese. Garnish with fresh basil or parsley before serving.

Notes

  • Adjust the spice level by adding more or less red pepper flakes according to your preference.
  • This soup can be made ahead of time and stored in the refrigerator. Reheat before serving.
