Delicious and colorful vegetable tortilla rolls, perfect for parties or as a healthy snack.

- 4 large flour tortillas (8-inch diameter)
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup finely chopped bell peppers (assorted colors)
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/2 cup finely chopped red onion
- 1/2 cup fresh cilantro, chopped
Instructions
- In a medium bowl, combine the softened cream cheese, sour cream, lime juice, salt, and black pepper. Mix until smooth and well-blended.
- Lay out the flour tortillas on a clean surface. Spread an even layer of the cream cheese mixture over each tortilla, leaving a small border around the edges.
- Evenly distribute the chopped bell peppers, shredded carrots, sliced cucumber, chopped red onion, and fresh cilantro over the cream cheese layer on each tortilla.
- Tightly roll up each tortilla from one end to the other, pressing gently to secure the filling.
- Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Remove from the refrigerator, unwrap, and slice each roll into 1-inch pieces using a sharp knife.
- Serve immediately on a platter, or store in an airtight container in the refrigerator for up to 24 hours.
Notes
- These rolls can be made a day in advance for easy party prepping.
