Description

This roasted whole chicken is tender, flavorful, and has a crispy golden skin, highlighted with garlic and Parmesan.


Ingredients

  • 1 whole chicken (45 pounds)
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 lemon, quartered
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Pat the chicken dry and place it in a roasting pan.
  2. In a bowl, mix softened butter, minced garlic, Parmesan cheese, salt, pepper, oregano, and thyme until well combined.
  3. Gently separate the skin from the chicken and spread half of the mixture underneath. Rub the rest over the outside of the chicken.
  4. Squeeze lemon wedges over the chicken and place them inside the cavity.
  5. Roast for about 1 hour or until the internal temperature reaches 165°F (75°C) and the skin is golden brown. Baste halfway through cooking.
  6. Let it rest for 10-15 minutes before carving. Garnish with parsley and serve warm.
