Description

Delicious and festive gingerbread cookies, perfect for the holiday season!


Ingredients

Scale
  • 3 cups (385g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground ginger
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ¾ cup (170g) unsalted butter, at room temperature
  • ¾ cup light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup unsulphured molasses
  • ½ cup granulated sugar (for rolling)
  • 60 Hershey’s Hugs or Kisses, unwrapped

Instructions

  1. Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a stand mixer or large bowl, beat butter and brown sugar until smooth. Add egg and vanilla, then beat until creamy.
  4. Add molasses and mix until well combined.
  5. Gradually mix in the dry ingredients on low speed until a thick dough forms.
  6. Use a 1-inch cookie scoop to portion dough. Roll into balls, then coat each ball in granulated sugar.
  7. Place on prepared baking sheets about 1 inch apart. Bake for 8 minutes.
  8. While baking, unwrap the Hershey’s Kisses.
  9. Remove cookies from oven and let cool for 4 minutes. Then, press a chocolate kiss into the center of each cookie.
  10. Let cookies cool completely before storing in an airtight container.
