Description

Deliciously soft and chewy blondies filled with white chocolate chips and tart cranberries.


Ingredients

  • 3/4 cup unsalted butter (melted)
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 and 1/2 cups all purpose flour (or gluten-free flour like Bob’s Red Mill)
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat the oven to 325 degrees. Grease or spray an 8×8 baking pan with non-stick cooking spray and line with aluminum foil or parchment paper, leaving some overhang.
  2. In a large mixing bowl, add the melted butter and brown sugar and whisk together until just combined.
  3. Add the egg and vanilla and mix until combined.
  4. Stir in the flour and chocolate chips and incorporate.
  5. Fold in the cranberries.
  6. Pour the batter into the prepared pan and smooth out.
  7. Transfer to the oven and bake for approximately 30 minutes or until golden on the edges and a skewer inserted in the middle comes out clean.
  8. Leave in the pan to cool completely. Cut into squares to serve.
  9. Will last up to one week when stored in an airtight container.

Notes

  • For extra sweetness, you can add an additional 1/4 cup of brown sugar.
