- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 1 cup sharp cheddar cheese, shredded
- 1 cup low-sodium chicken broth
- 1 cup biscuit mix
- ½ cup whole milk
- 1 cup mixed vegetables (peas and carrots)
- 1 tsp onion powder
- 1 tsp dried thyme
- 2 tbsp butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a skillet over medium heat, melt butter and sauté diced chicken until browned (5-7 minutes). Add garlic and cook until fragrant.
- Stir in mixed vegetables and chicken broth. Season with onion powder, thyme, salt, and pepper. Simmer for about 3 minutes.
- In a bowl, combine biscuit mix with cheddar cheese and milk until just mixed.
- Pour the chicken mixture into the baking dish and dollop the biscuit batter on top.
- Bake for 25-30 minutes or until golden brown.
Notes
- This dish can easily be customized with any leftover vegetables you have on hand.
- For a spicier kick, add some cayenne pepper or hot sauce to the chicken mixture.
