Description

This hearty chicken and biscuit casserole is a comfort food favorite, combining tender chicken with vegetables and a delicious biscuit topping.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup low-sodium chicken broth
  • 1 cup biscuit mix
  • ½ cup whole milk
  • 1 cup mixed vegetables (peas and carrots)
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 2 tbsp butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a skillet over medium heat, melt butter and sauté diced chicken until browned (5-7 minutes). Add garlic and cook until fragrant.
  3. Stir in mixed vegetables and chicken broth. Season with onion powder, thyme, salt, and pepper. Simmer for about 3 minutes.
  4. In a bowl, combine biscuit mix with cheddar cheese and milk until just mixed.
  5. Pour the chicken mixture into the baking dish and dollop the biscuit batter on top.
  6. Bake for 25-30 minutes or until golden brown.
