Description
A creamy and flavorful dish combining chicken and chorizo with orzo pasta and fresh spinach.

- 3–4 boneless, skinless chicken breasts
- 6 oz chorizo sausage (spicy or mild)
- 1 cup orzo pasta
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 medium yellow onion, diced
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced chicken breasts seasoned with salt and pepper; cook for about 6-8 minutes until golden brown and cooked through. Remove from skillet.
- Add sliced chorizo to the same skillet; cook until slightly crispy. Remove and set aside.
- In the same skillet, add diced onion and minced garlic; sauté for 3-4 minutes until translucent. Stir in heavy cream and chicken broth; mix well.
- Add orzo to the creamy mixture and simmer for about 10-12 minutes until al dente.
- Fold in fresh spinach until wilted (1-2 minutes). Return chicken and chorizo to the skillet; mix well and cook for an additional 2-3 minutes.
Notes
- This dish can be adjusted to include more vegetables as desired.
- For a spicier kick, consider using a hotter chorizo or adding crushed red pepper flakes.
