Ingredients

- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a large bowl, beat softened butter with granulated and brown sugar until light and fluffy (about 3 minutes).
- Add in the egg and vanilla extract; mix until well combined.
- Fold in the cream cheese until smooth.
- Gradually mix in the dry ingredients until just combined. Carefully fold in the chopped strawberries.
- Scoop tablespoon-sized amounts onto prepared baking sheets about two inches apart.
- Bake for 12–15 minutes until edges are lightly golden but centers remain soft.
Notes
- Make sure not to overmix the dough after adding the dry ingredients.
- Store cookies in an airtight container at room temperature for up to a week.
