Description

Soft and delicious cookies filled with fresh strawberries and cream cheese.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, beat softened butter with granulated and brown sugar until light and fluffy (about 3 minutes).
  4. Add in the egg and vanilla extract; mix until well combined.
  5. Fold in the cream cheese until smooth.
  6. Gradually mix in the dry ingredients until just combined. Carefully fold in the chopped strawberries.
  7. Scoop tablespoon-sized amounts onto prepared baking sheets about two inches apart.
  8. Bake for 12–15 minutes until edges are lightly golden but centers remain soft.

Notes

  • Make sure not to overmix the dough after adding the dry ingredients.
