Description

Delicious cream-filled donuts made with a soft dough and rich milk cream filling.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon active dry yeast
  • ½ teaspoon salt
  • ½ cup warm milk
  • 2 tablespoons unsalted butter, softened
  • 1 large egg
  • Neutral oil (vegetable or canola) for deep frying
  • ½ cup granulated sugar (for rolling)
  • 1 cup heavy cream
  • 2 tablespoons condensed milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, yeast, and salt. In a separate bowl, whisk the warm milk, egg, and softened butter. Gradually pour the wet mixture into the dry ingredients and mix until a soft dough forms. Knead by hand or with a stand mixer for about 10 minutes until the dough is smooth and elastic.
  2. Cover the dough with a clean towel and let it rise in a warm spot for 1 to 1 hours, or until it has doubled in size. This is the perfect time to warm your kitchen with a good playlist and the scent of coffee brewing.
  3. Punch down the dough gently. Roll it out on a floured surface to about ½-inch thickness. Use a round cutter (about 3 inches) to cut out circles. Place them on a baking sheet, cover lightly, and let them rise again for 30 minutes.
  4. Heat oil in a deep pot to 325°F (160°C). Carefully fry the donuts in batches for 1–2 minutes per side until golden brown and puffed. Let them drain on a paper towel-lined tray, then roll each warm donut generously in granulated sugar.
  5. In a cold mixing bowl, whip the heavy cream until soft peaks form. Add condensed milk and vanilla extract, and continue whipping until you get a smooth, pipeable cream.
  6. Once the donuts are cool enough to handle, use a knife or chopstick to create a pocket in the side of each one. Pipe the cream generously into each donut using a piping bag. Be gentle — you want that perfect, dreamy cream-to-dough ratio.
