  • 2 tablespoons Lemon Rind
  • 1/4 cup Lemon Juice
  • 1 cup Unsalted Butter

Instructions

  1. In a heatproof bowl, whisk together the eggs, caster sugar, lemon rind, and fresh lemon juice.
  2. Place the bowl over a saucepan of simmering water, ensuring the bowl does not touch the water.
  3. Gently stir the mixture for about 3 minutes or until the sugar has dissolved completely.
  4. Gradually add the unsalted butter in small cubes, whisking continuously.
  5. Continue cooking for about 5 minutes, whisking frequently, until the mixture thickens sufficiently.
  6. Remove from heat, and cover the surface with plastic wrap to prevent any skin from forming.
  7. Allow the lemon butter to cool to room temperature, then refrigerate until chilled and set.
