Instructions
- In a heatproof bowl, whisk together the eggs, caster sugar, lemon rind, and fresh lemon juice.
- Place the bowl over a saucepan of simmering water, ensuring the bowl does not touch the water.
- Gently stir the mixture for about 3 minutes or until the sugar has dissolved completely.
- Gradually add the unsalted butter in small cubes, whisking continuously.
- Continue cooking for about 5 minutes, whisking frequently, until the mixture thickens sufficiently.
- Remove from heat, and cover the surface with plastic wrap to prevent any skin from forming.
- Allow the lemon butter to cool to room temperature, then refrigerate until chilled and set.
