Description

A delicious stir-fried chicken dish with vibrant bell peppers and mushrooms, seasoned to perfection.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 8 ounces fresh mushrooms, sliced
  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • ¼ cup chicken broth
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken strips with salt and black pepper in a mixing bowl.
  2. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes until browned; remove from skillet.
  3. In the same skillet, sauté sliced mushrooms and bell peppers for about 5 minutes until softened. Add garlic and thyme; cook for another minute.
  4. Return cooked chicken to the skillet, pour in chicken broth and soy sauce, stirring well. Simmer for 3-4 minutes until the sauce thickens slightly.
  5. Serve warm, garnished with chopped parsley.
