- 1 cup pumpkin puree (Use pure pumpkin puree, not pumpkin pie filling.)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 8 oz cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well blended.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In another bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
- Spoon a small amount of muffin batter into the bottom of each muffin cup, then add a dollop of the cheesecake filling. Top with another spoonful of muffin batter, covering the cheesecake.
- Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
