Ingredients

  • 1 cup pumpkin puree (Use pure pumpkin puree, not pumpkin pie filling.)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1 1/2 cups all-purpose flour
  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well blended.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. In another bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  5. Spoon a small amount of muffin batter into the bottom of each muffin cup, then add a dollop of the cheesecake filling. Top with another spoonful of muffin batter, covering the cheesecake.
  6. Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the muffin comes out clean.
