Instructions

  1. Prepare the almond dough: Start by creaming the softened butter and powdered sugar together until light and fluffy. This creates that melt-in-your-mouth texture. Stir in the vanilla and almond extracts, infusing the dough with flavor.
  2. Mix in the dry ingredients: In a separate bowl, whisk together the flour, salt, and ground almonds. Gradually add this to the butter mixture, stirring just until everything comes together. The dough will be soft but not sticky.
  3. Chill the dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes. This step helps the dough firm up, making it easier to shape.
  4. Shape and fill: Scoop out a tablespoon of dough and flatten it slightly in your palm. Add about 1/2 teaspoon of raspberry jam to the center, then gently fold the edges around the jam and roll into a ball. Place on a lined baking sheet.
