Description

Delicious mini brownie bites topped with cream cheese frosting and festive sprinkles, perfect for any occasion!


Ingredients

Scale
  • 1 cup golden brown sugar, packed
  • 1/2 cup salted butter, melted
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 egg, large
  • 1/2 teaspoon red gel food colouring (may need more if not using gel colour)
  • 1 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 12 oz can cream cheese frosting
  • 2 tablespoons festive sprinkles

Instructions

  1. Preheat oven to 350F.
  2. Dump brown sugar, melted butter, vanilla extract, salt, egg and food colouring into a large mixing bowl.
  3. Stir until no lumps remain.
  4. Add the flour and cocoa powder to the bowl.
  5. Stir until all of the ingredients are fully combined.
  6. Spoon the brownie batter into greased mini muffin tins, filling each cup about two thirds of the way.
  7. Place the muffin tins in the oven and bake until a toothpick inserted in the center of a brownie comes up clean, about 13-15 minutes.
  8. Remove the brownies from the oven and allow them to cool for a few minutes before removing them from the muffin tins.
  9. Allow the brownies to cool completely before frosting them.
  10. Spoon the cream cheese frosting into a piping bag fitted with a large closed star tip.
  11. Pipe the frosting onto the brownies.
  12. Top the brownies with the sprinkles.
  13. Serve and enjoy!

Notes

  • For a more vibrant colour, add additional food colouring.
  • Ensure the brownies cool completely before frosting to prevent melting.
